Keto-Friendly Ribeye Steak with Herb Butter
Ingredients
For the Ribeye Steak:
- 2 ribeye steaks (about 1 inch thick, 8 oz each)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1 garlic clove, smashed
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
For the Herb Butter:
- 4 tablespoons unsalted butter, softened
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
- 1 garlic clove, minced
- Zest of 1 lemon
- Salt and freshly ground black pepper, to taste
Preparation
Step 1: Prepare the Herb Butter
- In a small mixing bowl, combine the softened butter, parsley, thyme, rosemary, minced garlic, lemon zest, salt, and pepper.
- Mix the ingredients thoroughly until well combined. Taste and adjust the seasoning if needed.
- Scoop the herb butter mixture onto a piece of plastic wrap or parchment paper. Roll it into a log shape, twisting the ends to secure.
- Refrigerate the herb butter until firm, about 30 minutes, or until ready to use.
Step 2: Season the Ribeye Steaks
- Take the ribeye steaks out of the refrigerator about 30 minutes before cooking, allowing them to reach room temperature.
- Drizzle 1 tablespoon of olive oil on each steak, rubbing it evenly over both sides.
- Season the steaks generously with salt and freshly ground black pepper on both sides.
Step 3: Cook the Steaks
- Preheat a cast iron skillet or heavy-bottomed pan over high heat until hot.
- Add the remaining tablespoon of olive oil to the pan, swirling to coat evenly.
- Place the ribeye steaks into the hot pan, cooking them undisturbed for about 3-4 minutes to develop a crisp, brown crust.
- Flip the steaks and add the smashed garlic, rosemary, and thyme sprigs to the pan.
- Cook for another 3-4 minutes for medium-rare, occasionally spooning the infused oil and butter over the steaks with a spoon. Adjust the cooking time to reach your desired doneness.
- Once cooked to your liking, remove the steaks from the pan and transfer them to a plate. Allow them to rest for 5-10 minutes to allow the juices to redistribute.
Step 4: Serve
- Once the steaks have rested, slice each steak against the grain and place on a serving platter.
- Cut the chilled herb butter into slices and place on top of the hot steaks, allowing it to melt and soak in the delicious flavors.
- Garnish with additional herbs if desired, and serve immediately, savoring each delectable, keto-friendly morsel.
