Keto-Friendly Ribeye Steak with Herb Butter

Ingredients

For the Ribeye Steak:

  • 2 ribeye steaks (about 1 inch thick, 8 oz each)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 garlic clove, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

For the Herb Butter:

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 garlic clove, minced
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste

Preparation

Step 1: Prepare the Herb Butter

  1. In a small mixing bowl, combine the softened butter, parsley, thyme, rosemary, minced garlic, lemon zest, salt, and pepper.
  2. Mix the ingredients thoroughly until well combined. Taste and adjust the seasoning if needed.
  3. Scoop the herb butter mixture onto a piece of plastic wrap or parchment paper. Roll it into a log shape, twisting the ends to secure.
  4. Refrigerate the herb butter until firm, about 30 minutes, or until ready to use.

Step 2: Season the Ribeye Steaks

  1. Take the ribeye steaks out of the refrigerator about 30 minutes before cooking, allowing them to reach room temperature.
  2. Drizzle 1 tablespoon of olive oil on each steak, rubbing it evenly over both sides.
  3. Season the steaks generously with salt and freshly ground black pepper on both sides.

Step 3: Cook the Steaks

  1. Preheat a cast iron skillet or heavy-bottomed pan over high heat until hot.
  2. Add the remaining tablespoon of olive oil to the pan, swirling to coat evenly.
  3. Place the ribeye steaks into the hot pan, cooking them undisturbed for about 3-4 minutes to develop a crisp, brown crust.
  4. Flip the steaks and add the smashed garlic, rosemary, and thyme sprigs to the pan.
  5. Cook for another 3-4 minutes for medium-rare, occasionally spooning the infused oil and butter over the steaks with a spoon. Adjust the cooking time to reach your desired doneness.
  6. Once cooked to your liking, remove the steaks from the pan and transfer them to a plate. Allow them to rest for 5-10 minutes to allow the juices to redistribute.

Step 4: Serve

  1. Once the steaks have rested, slice each steak against the grain and place on a serving platter.
  2. Cut the chilled herb butter into slices and place on top of the hot steaks, allowing it to melt and soak in the delicious flavors.
  3. Garnish with additional herbs if desired, and serve immediately, savoring each delectable, keto-friendly morsel.
