Recipe Summary

  • Calories per Serving: ~250 calories
  • Total Time: 30 minutes

Ingredients

For the Stir-Fry:

  • 1 lb (450 g) lean beef sirloin, thinly sliced
  • 2 tbsp olive oil or avocado oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, thinly sliced (use a mix of colors)
  • 1 cup snap peas
  • 1 small carrot, julienned
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 green onions, chopped
  • 1 tbsp sesame seeds (optional, for garnish)

For the Sauce:

  • 3 tbsp low-sodium soy sauce or tamari (for gluten-free)
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch (or arrowroot powder) mixed with 1 tbsp water

Instructions

1. Prepare the Sauce
In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixture. Set aside.

2. Cook the Beef

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  • Add the thinly sliced beef and cook for 2-3 minutes until browned. Remove from the skillet and set aside.

3. Stir-Fry the Vegetables

  • Add the remaining oil to the skillet. Toss in the broccoli, bell peppers, snap peas, and carrots. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
  • Add the garlic and ginger, and cook for another minute until fragrant.

4. Combine Everything

  • Return the cooked beef to the skillet.
  • Pour the sauce over the beef and vegetables. Stir well to coat everything evenly. Cook for 2-3 minutes until the sauce thickens slightly.

5. Serve

  • Garnish with green onions and sesame seeds if desired. Serve hot over steamed brown rice, quinoa, or cauliflower rice for a low-carb option.

Tips for Success

  • Slice the Beef Thinly: Freezing the beef for 15-20 minutes before slicing makes it easier to cut thin strips.
  • Use High Heat: Stir-frying requires high heat to cook quickly and preserve the texture of the vegetables.
  • Customize Your Veggies: Feel free to add zucchini, mushrooms, or any other vegetables you enjoy.

Enjoy this nutrient-packed meal that’s full of flavor and naturally wholesome!
