- Total Time: 30 minutes
Ingredients
For the Stir-Fry:
- 1 lb (450 g) lean beef sirloin, thinly sliced
- 2 tbsp olive oil or avocado oil
- 1 cup broccoli florets
- 1 cup bell peppers, thinly sliced (use a mix of colors)
- 1 cup snap peas
- 1 small carrot, julienned
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 green onions, chopped
- 1 tbsp sesame seeds (optional, for garnish)
For the Sauce:
- 3 tbsp low-sodium soy sauce or tamari (for gluten-free)
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch (or arrowroot powder) mixed with 1 tbsp water
Instructions
1. Prepare the Sauce
In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixture. Set aside.
2. Cook the Beef
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the thinly sliced beef and cook for 2-3 minutes until browned. Remove from the skillet and set aside.
3. Stir-Fry the Vegetables
- Add the remaining oil to the skillet. Toss in the broccoli, bell peppers, snap peas, and carrots. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
- Add the garlic and ginger, and cook for another minute until fragrant.
4. Combine Everything
- Return the cooked beef to the skillet.
- Pour the sauce over the beef and vegetables. Stir well to coat everything evenly. Cook for 2-3 minutes until the sauce thickens slightly.
5. Serve
- Garnish with green onions and sesame seeds if desired. Serve hot over steamed brown rice, quinoa, or cauliflower rice for a low-carb option.
Tips for Success
- Slice the Beef Thinly: Freezing the beef for 15-20 minutes before slicing makes it easier to cut thin strips.
- Use High Heat: Stir-frying requires high heat to cook quickly and preserve the texture of the vegetables.
- Customize Your Veggies: Feel free to add zucchini, mushrooms, or any other vegetables you enjoy.
Enjoy this nutrient-packed meal that’s full of flavor and naturally wholesome!
