Wholesome Venison Breakfast Skillet
Ingredients
- 1 pound ground venison
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2 cups baby spinach leaves
- 4 large eggs
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- Fresh parsley, chopped, for garnish
Preparation
Step 1: Cook the Venison
- Begin by heating 1 tablespoon of olive oil in a large, heavy-bottomed skillet over medium heat.
- Add the ground venison to the skillet and cook, breaking it apart with a spatula until it is browned all over and cooked through. This should take about 5-7 minutes.
- Once done, remove the cooked venison from the skillet with a slotted spoon and set it aside on a plate.
Step 2: Sauté the Vegetables
- In the same skillet, add the diced onion and both bell peppers. Sauté over medium heat until the vegetables are soft and slightly caramelized, around 7-8 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the baby spinach to the skillet and stir until wilted, about 1-2 minutes.
Step 3: Reintroduce the Venison and Season
- Return the cooked venison to the skillet with the sautéed vegetables.
- Season the mixture with smoked paprika, ground black pepper, salt, and cayenne pepper if using. Stir everything together to evenly coat the ingredients with the seasonings.
Step 4: Prepare the Eggs
- Create four small wells in the skillet mixture and crack one egg into each well.
- Sprinkle a little salt and pepper over each egg.
Step 5: Cook the Skillet
- Reduce the heat to low and cover the skillet. Allow the eggs to cook until the whites are set but the yolks remain a bit runny, approximately 5-7 minutes. If you prefer firmer yolks, cook for a few minutes longer.
Step 6: Add Tomatoes and Feta
- Once the eggs are cooked to your desired doneness, remove the skillet from the heat.
- Top with halved cherry tomatoes and crumble the feta cheese over the top.
Step 7: Garnish and Serve
- Garnish the skillet with freshly chopped parsley.
- Serve immediately, straight from the skillet for a comforting breakfast that’s hearty and full of flavor.
