Braised Lamb & Rosemary Gnocchi with Herb Butter Sauce
Ingredients
For the Braised Lamb:
– 1 lb (450g) lamb shoulder, cut into cubes
– 2 tablespoons olive oil
– 1 large onion, finely chopped
– 2 carrots, peeled and diced
– 2 celery stalks, diced
– 4 cloves garlic, minced
– 2 cups (480ml) beef or lamb stock
– 1 cup (240ml) red wine
– 1 tablespoon tomato paste
– 2 sprigs fresh rosemary
– 1 bay leaf
– Salt and pepper to taste
For the Rosemary Gnocchi:
– 2 lbs (900g) russet potatoes
– 1 ½ cups (190g) all-purpose flour
– 1 egg
– 1 teaspoon salt
– 1 tablespoon fresh rosemary, finely chopped
For the Herb Butter Sauce:
– 4 tablespoons unsalted butter
– 1 tablespoon fresh sage, finely chopped
– 1 tablespoon fresh parsley, finely chopped
– Salt and pepper to taste
Preparation
1. Braising the Lamb:
1. In a heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.
2. Season the lamb with salt and pepper, then sear until browned on all sides. Remove from the pot and set aside.
3. In the same pot, reduce the heat to medium and add the onion, carrots, and celery. Sauté until softened, about 5 minutes.

2. While still warm, peel the potatoes and press them through a potato ricer or mash them until smooth.
3. Let the potatoes cool slightly, then add the flour, egg, salt, and rosemary. Gently combine to form a soft dough.
4. Divide the dough into sections, rolling each into a long rope about ¾ inch thick. Cut into 1-inch pieces and roll each across the back of a fork to form grooves.
5. Bring a pot of salted water to a boil, then reduce to a simmer. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and place on a baking sheet to drain.
3. Preparing the Herb Butter Sauce:
1. In a large skillet over medium-low heat, melt the butter.
2. Once foamy, add the sage and parsley, allowing the flavors to infuse into the butter. Season with salt and pepper.
3. Add the cooked gnocchi to the skillet, tossing gently to coat them in the sauce.
4. Assembling the Dish:
1. Once the lamb is braised, remove and discard the rosemary and bay leaf. Shred the lamb with two forks.
