  • Total time: 1 hour 10 minutes

Instructions

1. Prepare the Fries:

  • Preheat your oven to 425°F (220°C).
  • Slice the russet potatoes into even-sized fries, about 1/4-inch thick.
  • Place the sliced potatoes in a large bowl and toss with olive oil, salt, and pepper to coat evenly.
  • Arrange the fries in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding to ensure even cooking.
  • Bake for 25-30 minutes, flipping halfway through, until the fries are golden and crispy.

2. Make the Chili:

  • While the fries are baking, heat the olive oil in a large skillet over medium-high heat.
  • Add the diced onion and cook for about 3 minutes until translucent.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Cook until the beef is browned, about 5-7 minutes.
  • Drain any excess fat from the skillet.
  • Stir in the chili powder, ground cumin, paprika, and cayenne pepper, and cook for another minute.
  • Add the tomato paste and mix until well incorporated.
  • Pour in the beef broth, diced tomatoes, and kidney beans. Bring the mixture to a simmer.
  • Reduce the heat to low, cover, and let the chili cook for 20 minutes. Stir occasionally.

3. Assemble the Dish:

  • Once the fries are done, remove them from the oven and let them cool for a few minutes.
  • Place a portion of fries on each serving plate.
  • Spoon the prepared chili generously over the fries.
  • Sprinkle shredded cheddar cheese over the top.
  • Add a dollop of sour cream and a sprinkle of chopped green onions.
  • For extra heat and flavor, top with sliced jalapeños.
